Mirepoix is a French method of cooking vegetables together to form a flavorful base for a dish – very commonly soup. One day, I was preparing a soup, and before adding the liquid, I decided to take out some of the vegetables for my toddler to try. He loved it! And not surprisingly, when I tried it, I loved it too. Why not make it a simple, flavorful side dish? It goes well with everything, is healthy, and only takes a few minutes.
- 2 tbsp olive oil
- 1 small onion, diced
- 3 small carrots, peeled and diced
- 1 celery stalk, diced
- Salt and pepper, to taste
- 1 zucchini, chopped
- 2 garlic cloves, minced
Heat olive oil in a pot, and add the onion, carrots, and celery. Sauté for about 5 minutes, then add the zucchini. Sauté for 5 minutes, then add the garlic, and sauté an additional 2-3 minutes until all the vegetables are slightly soft, but not mushy.
