Autumn flavors come together in this roasted chicken with apples, honey, garlic and nutmeg. Wonderful for Rosh Hashanah, this elegant, yet easy to prepare, flavorful and moist chicken will impress all those at your table.
- 1 whole chicken, cut into 1/8ths
- 1 red apple, cut into 1/8ths
- 2 tbsp olive oil
- 2 tbsp apple cider vinegar
- 4 large garlic cloves, crushed
- 3/4 tsp honey
- 3/4 tsp cinnamon
- Pinch of nutmeg
- 1/4 tsp salt
- Pinch of pepper
Note: you can also use chicken legs and thighs, or chicken bottoms.
Preheat oven to 400 degrees.
Arrange chicken and apples in a roasting pan. Mix together remaining ingredients and pour over the chicken and apples. Mix to make sure the chicken is coated evenly. Cover tightly. Roast for one hour, then uncover and roast for an additional 5-10 minutes.
