Brisket with Caramelized Onions & Thyme

Delicious & tender brisket with scrumptious gravy from the caramelized onions, thyme and red wine. Easy and quick to prep – then pop it into the oven and you’re all set!



  • 3 lb brisket
  • Salt
  • Pepper
  • 4 sprigs thyme, divided
  • 3 tbsp oil
  • 1 large onion, thinly sliced
  • 1 cup dry red wine


Preheat oven to 300 degrees. Season both sides of the brisket with salt and pepper, and leaves from 2 thyme sprigs. Set aside. Heat oil in a pan and saut̩ the onions until caramelized, about 8-10 minutes. Remove onions from pan. Add the brisket and sear on both sides, about 3 minutes per side. Add the wine, reserved onions, and remaining thyme to the pan. Bring to a simmer. Cover and place in preheated oven until tender, about 2 1/2 Р3 hours.
