Sweet Potato & Coconut Mini Muffins

These mini kugel-like muffins are easy to prepare and are packed with healthy vegetables. In this recipe, coconut oil provides a wonderful flavor pairing to the sweet potato and also serves as the healthy oil. These fun miniatures are great for snacking, breakfast, or as a side dish, and are even popular with children.

Ingredients

  • 2 cups grated sweet potato
  • 1 cup grated zucchini
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 1 cup flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1/4 cup coconut oil

Directions

Preheat oven to 350 degrees. Lightly grease or spray 24 mini muffin compartments on a muffin tray.

Combine all ingredients in a bowl until just incorporated. Spoon into muffin compartments. Bake until set, about 30 minutes. Let cool slightly, remove from pan, and enjoy.

Store in an air tight container in the refrigerator.
