Healthy Apple Cinnamon Breakfast Muffins


It’s tough to find a tasty, healthy muffin suitable for breakfast. This easy recipe uses a combination of oats and flour to bring a breakfast-like consistency while keeping it low-carb. Apple sauce instead of oil, and a perfect pairing of maple syrup in replace of refined sugars really makes this the perfect healthy breakfast muffin. Don’t forget the coffee! P.S. kids love them too!


Makes 12 muffins



Preheat oven to 350 degrees and insert 12 muffin liners into a muffin tray.

Combine oatmeal, flour, baking powder, 1/2 tsp cinnamon and salt in a bowl. Add the apple sauce and egg and mix to incorporate. Combine maple syrup, coconut oil and 1 tsp cinnamon in a small bowl. Gently fold into the mixture.

Scoop batter into muffin pan and bake until set, about 15 minutes.
