Mini Vegetable Muffins


These healthy muffins are easy to prepare and are loaded with veggies. Bite size and super cute, they are a fun way to incorporate vegetables into kids’ meals but are adored by both kids and grown ups!




Preheat oven to 350 degrees. Lightly grease or spray 24 mini muffin compartments on a muffin tray.

Combine all ingredients in a bowl until just incorporated. Spoon into muffin compartments. Bake until set, about 30 minutes.
