Cream of Spinach Soup

Ingredients

  • 3 tbsp unsalted butter
  • 1 medium onion, diced
  • Pinch of salt
  • Pinch of Pepper
  • 2 garlic cloves, minced
  • 16 oz (1 lb) fresh or frozen spinach
  • 3 tbsp flour
  • 2 cups vegetable stock
  • 1 1/2 cups whole milk or heavy cream
  • Pinch of nutmeg

Directions

Heat butter in a medium pot. Add the onion along with a pinch of salt and pepper. Sauté until soft, about 5-7 minutes. Add the garlic and sauté an additional 1-2 minutes. Add the spinach and cook down until wilted. Add the flour and mix to incorporate. Pour in the vegetable stock, scraping up all the bits from the bottom and sides of the pot. Bring to a boil and simmer for 10 minutes. Add the milk or cream, heat through, then stir in a pinch of nutmeg. Serve as is or blended.
