Vegetable Orzo


Kicking up ordinary orzo to create an easy side dish filled with fresh vegetables and spice. Pairs well with any protein, or enjoy it as a light vegetarian meal.




Preheat oven to 400 degrees. Mix together the broccoli, peas, onion, pepper, 1 tsp olive oil and a pinch of salt and pepper, and place on baking sheet pan. Roast for 15 minutes. In the meantime, cook the orzo according to the package directions. Add the roasted vegetables to the cooked orzo, along with the spices, 1 tbsp olive oil and a pinch of salt and pepper. Mix gently to incorporate. Serve warm or cold.
