BBQ Ranch Salad


A delicious salad with layered flavors from the different components – roasted red pepper, corn, tortilla chips, ranch dressing, and BBQ sauce. It’s a perfect salad to accompany your barbecue or to serve alongside any meal – it will definitely take it up a notch!



For the salad:

Preheat oven to 425 degrees. If making roasted peppers from scratch, place the diced pepper, olive oil, and pinch of salt and pepper on a baking sheet pan and roast until soft and slightly charred, about 15 minutes. In the meantime, mix together the dressing ingredients. Assemble the salad – add lettuce, cucumber, tomatoes, and corn to a salad bowl. Place crushed tortilla chips in the center. Add the roasted peppers to the salad, drizzle with dressing and BBQ sauce.
