Pesto Drizzled Chicken

This is a great and fast way to cook flavorful chicken breast for dinner without a mess. Simply toss the chicken with some olive oil and spices and bake it in the oven. While it’s cooking, whip up the pesto. Then just assemble! Serve with rice, potatoes, or other vegetable side dish. This chicken is also delicious in wraps.



For the chicken:

  • 1 lb thin chicken breast
  • 12 tsp smoked paprika
  • 12 tsp garlic powder
  • 14 tsp cumin
  • 14 tsp ground black pepper
  • 14 tsp salt
  • 18 tsp dried oregano
  • 1 tbsp olive oil

For the pesto:

  • 4 cups loosely packed basil leaves
  • 14 tsp ground black pepper
  • 12 tsp salt
  • 2 tbsp fresh lemon juice
  • 1 clove garlic
  • 14 cup Avocado oil or other neutral oil + more as needed


Preheat oven to 425 degrees. Toss the chicken with the spices and oil, and arrange on a baking sheet pan lined with parchment paper. Bake for 20-25 minutes. In the meantime, place all the pesto ingredients into a mini prep or food processor and process until smooth, adding additional oil as needed to reach desired consistency. Remove chicken from oven, slice and arrange on a platter. Drizzle with pesto and serve.
