Chinese Rice

Super easy Chinese rice with a medley of scrumptious sautéed vegetables. 



  • 2 tbsp oil
  • 1 carrot, julienned
  • 1 celery stalk, julienned
  • 1 small onion, thinly sliced
  • 2 peppers, thinly sliced (you can use any combination to make up 2 whole peppers – such as 1 red and 1 green, or 1/2 of each: red, green, yellow, orange (as shown in the picture).
  • Pinch of salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp garlic powder
  • 4 tbsp soy sauce
  • 1 cup rice, cooked


Preheat oven to 300 degrees. Heat oil in a large pan and add the carrot, celery, onion and peppers. Sprinkle with a pinch of salt, ground black pepper, and garlic powder. Sauté until slightly soft, about 10 minutes. Add the soy sauce and stir to incorporate, cooking an additional 1-2 minutes.

Place cooked rice in an oven safe dish or pot. Pour vegetable medley over the rice. Cover, and bake for 45 minutes.
