This is one of the easiest, quickest side dishes I have ever made by accident. It was 20 minutes before a dinner, when I realized I needed another side dish. I looked at what I had on hand – some mushrooms, a pepper…sausages stored in the freezer for a rainy day…I tossed it all together in a sauté pan and it was so incredibly yummy that we now make it again and again. It’s perfect for when you just need that something extra, and works as a hearty side since it contains both sausages and mushrooms.
- 2 tbsp olive oil
- 4 cooked sweet Italian sausages, cut into one inch chunks
- 1 red bell pepper, cut into one inch chunks
- 1 medium red onion, cut into one inch slices
- 8 oz mushrooms (belly Bella or similar), quartered
- Pinch of salt & pepper
Heat olive oil in a large sauté pan. Add onions, peppers, mushrooms, and pinch of salt & pepper, and cook until slightly soft, about 5 minutes. Add the sausage and cook all together, stirring occasionally, until most of the liquid from the mushrooms has evaporated, about 10 minutes.
