15 Minute Berries with Fresh Whipped Cream

Skip the store bought whipped cream that melts into puddles within minutes, and whip up this creamy homemade cream. Serve with fresh berries and an optional chocolate garnish for a delectable looking (and tasting) fresh no bake dessert.

Serves 6


  • 2 cups heavy cream
  • 4 tbsp confectioner’s sugar
  • 2 cups fresh berries such as strawberries, raspberries, blueberries, blackberries
  • 1 oz chocolate (optional)
  • 6 mint leaves, cut into ribbon like slices (optional)

Place heavy cream in a bowl and beat on medium-high until it begins to thicken and form soft peaks, about 5 minutes. Add the sugar and beat until firm peaks form and it is the consistency of whipped cream, about another 5 minutes.

If using strawberries, cut the medium – large ones in half or quarters. Divide the berries into bowls, about 1/3 cup in each. Use a tablespoon to add a large heap of whipped cream on top of the berries. Place mint on top if using. With a microplane or fine grater, grate the chocolate into fine shreds and sprinkle on top. Serve immediately.

Note: You can prepare the berries in advance. Prepare the whipped cream the same day you are using and store in the refrigerator to keep cold until ready to serve.
