Isn’t it great when you can use leftovers to create something new and delicious? It’s a win-win because you are using up what you already have, while eating something with fresh flavors. In our home, we love spicing up leftover chicken with fresh parsley, celery and chives. Depending on the type of leftover chicken you’re using, you can dice it into small pieces or shred it.
Whether we eat this chicken salad at home with some greens, or pack it into sandwiches for a picnic, there are never any leftovers!
Makes 4 sandwiches
- 1 lb any type of cooked chicken, cut into small pieces or shredded
- 2 celery ribs, diced,
- 1 tbsp chives or scallions diced
- 1 tbsp parsley, chopped
- 4 tbsp mayonaise
- 1 tsp Dijon mustard
- Pinch of each: salt, pepper, garlic powder, and paprika
- 4 slices of dill pickles or equivalent, diced (optional)
Add the chicken, celery, chives, parsley, mayo, dijon, spices, and pickles to a bowl and gently toss until all the ingredients are incorporated.
Serve room temperature or chilled.
