Sometimes, we just call it a mac and cheese night, and we don’t pretend that it’s anything else! I like to whip up this simple rendition with a cheesy creamy sauce and throw it into the oven while we choose a movie. HOWEVER, sometimes, we just can’t wait for it to bake in the oven, and this becomes a stovetop mac n cheese. If this sounds like you, then by all means skip the baking part. Nothing wrong with that!
- 1 lb box pasta, such as elbows
- 8 oz shredded cheddar cheese
- 4 tbsp butter
- 4 tbsp flour
- 2 cups milk
- Pinch of pepper
Preheat oven to 350 degrees.
Cook pasta according to package instructions. In the meantime, heat butter in a pan. Once melted, add the flour and stir to incorporate. It will be like a thick paste. Slowly add the milk to the pan a 1/4 cup at a time, and stir continuously as the mixture thickens. Add in the cheese and mix to incorporate, stirring in the sauce from the sides until the cheese is melted and fully mixed into the milk. Sprinkle in a pinch of pepper.
When the pasta is cooked, add it to a baking dish. Pour the sauce on top and mix well. Cover and bake for about 30 minutes (or eat immediately).
