Finally! A flavorful recipe to dress up that ordinary squash. To brighten the colors and bring the heat, I added paprika and cayenne, so I hope you like a bit of spice at your table.
I like to grill these alongside burgers, but feel free to toss them in the oven on 425 degrees for an indoor version.
- 2 large or 4 medium yellow squash, cut into quarter inch slices
- 4 tbsp olive oil
- 1⁄4 tsp salt
- 1⁄4 tsp ground pepper
- 1⁄4 tsp dried thyme
- 1⁄4 tsp cayenne pepper
- 1⁄4 tsp cumin
- 1⁄2 tsp paprika
- 1⁄2 tsp garlic powder
Preheat barbecue for direct grilling. Add squash to a bowl, toss with olive oil and spices to evenly coat all the squash slices. Grill until slightly soft, about 5 minutes per side.
