Crunchy Jicama Fries


Jicama is a vegetable that has been around for ages, yet I rarely see it offered at restaurants or even salad bars. Today I cut into a jicama to add a crunch and fresh taste to a homemade salad, but I still had so much remaining. I decided to bake them as “fries” and they turned out marvelously delicious and crunchy. Jicama is naturally crunchy, and retains its crispness even when baked. Try these as a healthy side, snack or as an alternative to French fries.


Preheat oven to 400 degrees. Place parchment paper on a baking sheet pan. Put jicama strips in a bowl, and toss with the olive oil and spices. Empty coated jicama onto the baking sheet in a single layer. Bake until beginning to brown and crisp, about 30 minutes.
