I know that baked and buffalo chicken seem like contradictory words to have in the title of a recipe. But really, they taste just like the spicy deep fried nuggets from that burger place, and are super tender. For those of you with an affinity for sports bar finger foods and a guilty conscious – these are for you! Serve buffalo chicken bites with a creamy dipping sauce, and alongside carrot and celery sticks.
- 1.5 lb chicken breast, cut into bite size chunks
- 1⁄2 cup flour
- 1⁄2 tsp salt + 1⁄2 tsp pepper
- 1⁄2 tsp paprika
- 1 egg, beaten
- 2 cups plain panko crumbs
- Olive oil
- 1 cup hot buffalo sauce
- Homemade cooling dipping sauce (optional)
Preheat oven to 425 degrees.
Place flour in a plate, bowl, or ziplock bag. Add salt, pepper and paprika to flour and mix lightly. Place egg on a second plate, and crumbs on a third plate. Dredge chicken pieces in flour mixture, then egg, and then crumbs, making sure they are coated all over.
Brush olive oil onto a baking sheet pan. Arrange chicken pieces on a single layer on the pan. Bake for 10 minutes, then flip pieces and bake for another 12 minutes.
Place buffalo sauce in a bowl. Add chicken pieces to the bowl and toss to coat evenly in the sauce. Transfer to a serving dish. Serve with cut up vegetables and a cooling dipping sauce.
