This is one of my favorite salads. Cabbage is just one of those vegetables that you can easily turn into something yummy, especially if you need to create a last minute salad. Yet, it adds so much flavor and texture to any meal. It’s crunchy, and bright, and this recipe takes slaw to a whole other level. There’s just so much flavor, it’s kind of addicting to eat. Bonus, you can whip it up in just a pinch!
I love to serve this slaw as an additional salad on the table (you can never have too many), or alongside Spicy Thai Chicken. If there are any leftovers (rarely!) I pack the slaw into sandwiches, on top of burgers and pulled beef for a crunch, and in salads for extra flavor (double yum).
You can serve this salad right away or make it the day before and let it marinate overnight. If you have cilantro on hand, I definitely recommend adding it. The sesame seeds add to the crunchy texture (and are super healthy).
- 1⁄2 head green cabbage, thinly chopped
- 2 tbsp mayonaise
- 1 tbsp Dijon mustard
- 1 tsp apple cider vinegar
- 1 tsp toasted sesame oil
- 1⁄2 tsp pure honey
- Pinch of salt
- 2 tbsp cilantro, finely chopped (optional)
- 1 tsp sesame seeds (optional)
Place chopped cabbage into a bowl. Add the mayo, Dijon mustard, apple cider vinegar, sesame oil, honey and salt. Mix well. Add cilantro and gently toss. Garnish with sesame seeds.
Serve or chill in the refrigerator until ready to serve.
