When I worked in NYC, I always felt like I needed a pick-me-up around 3pm. Something more substantial than a plain coffee or a fruit juice. I usually ended up going for a smoothie. But these smoothies averaged $10 each! I finally decided to take out my blender and try out the whole smoothie idea. I couldn’t believe how easy it was to just throw everything into a blender and have a drinkable snack.
Now that I’m working from home due to the Covid Pandemic, I want something quick and healthy in the morning. This smoothie was the perfect fill in. Bonus points for being able to take it on early morning baby walks or sip it on early morning virtual meetings.
I used banana for the fruit base, which gives the smoothie its substance, and peanut butter for protein. I’ve been really into almond milk lately, so I splash that into my smoothies, but regular milk or your favorite type will work just as well here. With the coffee added, you pretty much have everything you need for a perfect start to the morning. Just for kicks I threw in some cacao nibs – I like the subtle crunch, and the hint of chocolate plays so well with the other flavors. Plus they’re full of antioxidants. Win-win!
- 1 ripe banana
- 1 tbsp peanut butter
- 1 cup almond milk (or your favorite)
- 1 heaping tsp instant coffee
- 2 tbsp hot water
- 1⁄2 tsp maple syrup
- 1⁄2 tsp cacao nibs (optional)
Mix the instant coffee into the hot water until dissolved. Add the coffee to a blender along with the banana, peanut butter, milk, and maple syrup. Blend well. Add cacao nibs if using, and blend for another few seconds until broken into smaller pieces. Pour into your favorite glass or coffee cup and enjoy!
Note: If you are using unsweetened milk – you might want to add more maple syrup or a sweetener of your choice to taste.
